A keeper for ...I made this for dinner tonight- yum! A keeper for sure. My husband said, "I really like this." I included fresh cilantro and red, yellow, and orange bell peppers. I also used beans I had made the night before and spiced with cumin, paprika, chili powder, turmeric, salt, pepper, and garlic powder. I served it on top of quinoa and with slices of avocado.<br /><br />It looked like Mexican lasagna, smelled divine, and looked gourmet... But it's beans!
