Incredible Salad 2019




Salad is always one of the special dishes on our Thanksgiving table, and this year will be no exception. Last Thanksgiving I made a delicious jeweled kale and roasted acorn squash salad sprinkled with pomegranate seeds. This year I am making an interesting tossed salad mixing romaine lettuce with salad fixings and some savory condiments.






This Type of Salad Bowl Is Very Popular
The inspiration for this salad comes from a local Italian restaurant that we frequent in South Miami. This type of salad is one their best sellers. It is a colorful salad with chopped romaine lettuce, walnuts, roasted red peppers, diced red onion, blue cheese, diced tomatoes, black and green olives, diced yellow peppers.





Make it Your Way- Omit or Substitute
It is versatile and lends itself to lots of variations. For example, vegans can omit the blue cheese or others can substitute feta cheese. If nuts are a problem, omit them. If you would like to add a little sweetness, consider adding some dried cranberries. 


A Nice Lower Calorie Healthy Option
With all the rich caloric recipes that are cherished and consumed on Thanksgiving, it's nice to offer a lower calorie delicious option. 

Once everything is assembled, simply toss and dig in! Unfortunately, I forgot to get a photo of the salad once it was tossed. We ate it so fast, it was GONE!

Thanksgiving is a time to give thanks. Thank you to my loyal readers, and I pray that everyone will have a peaceful, joyous, healthy Thanksgiving!

This salad can be served anytime of the year but please consider it also for Christmas!

Prep Time: 15 minutes
Serves: 4-6

Ingredients: 
1 head of Romaine lettuce, chopped to bite size
1/2 cup of chopped walnuts
1/2 cup of chopped red onion
1/2 cup mixed olives
1/2 cup diced tomatoes
1/2 cup diced yellow pepper
1/2 cup of diced roasted red pepper
1/2 cup of crumbled blue cheese

Directions
Place lettuce in a large bowl. Add each ingredient to a section of the bowl. Just before serving, toss and dress with your favorite dressing.

  2. I'm a big fan of Thanksgiving salads! We should all sub in a lettuce other than Romaine though because of a new E. coli outbreak. Both the FDA and CDC are saying that "Restaurants and retailers should not serve or sell romaine lettuce if they cannot confirm it is from outside Salinas, California." Which means we should not be consuming it unless we can confirm the same. I'm just going to take a pass on it for a while, which is sad since I love it. But not willing to take any chances.

  3. I like to serve a salad at Thanksgiving too. This year we opted to make steamed broccoli instead just to switch it up a bit but I definitely like to have some nice healthy side dish options.
