Chilled Carrot Ginger Soup




Chilled soup really hits the spot in this 90 + degree weather!

Yesterday, I made my easiest ever Carrot Ginger Soup  and then chilled it for dinner. The soup is vegan ( and fine that way,  but I  topped it with some Greek plain yogurt and some cumin for additional flavor and protein. Simple, but perfect on a  hot humid evening.

It's not a new recipe , but the picture looked so pretty I wanted to share it. 

Do you ever think of eating your soups chilled ?  What kind of chilled soup do you make? Sweet or Savory?

  2. Yay, you're still making soup! I am too.....I made a new on the other day which I will post soon. I still haven't tried making a chilled soup though, but ginger carrot sounds like it would be perfect chilled!

  3. I could go for this after the hot day we had here. Love the vibrant color with that swirl of yogurt against it. I've not had many cold savory soups, but I do like chilled strawberry soup for dessert!

  5. Sounds yummy! I have a ton of carrots (10lbs!) in my fridge right now and I need some recipes to use to use them up. This one is going to the top of my list, it's so hot today too it came at the perfect time!

  6. I always think of soups as a wintertime food. When I asked for suggestions on my FB page for dinner, someone suggested chilled cantalope soup. I like the sound of that!
