Chilled soup really hit the spot in this 90 + degree weather!
Yesterday, I made my easiest ever Carrot Ginger Soup and then chilled it for dinner. The soup is vegan ( and fine that way, but I topped it with some Greek plain yogurt and some cumin for additional flavor and protein. Simple, but perfect on a hot humid evening.
It's not a new recipe , but the picture looked so pretty I wanted to share it.
Do you ever think of eating your soups chilled ? What kind of chilled soup do you make? Sweet or Savory?

This looks delicious! I love chilled soups in the summertime.
ReplyDeleteThis is one of the few cold soups I eat.
DeleteYay, you're still making soup! I am too.....I made a new on the other day which I will post soon. I still haven't tried making a chilled soup though, but ginger carrot sounds like it would be perfect chilled!
ReplyDeleteI could go for this after the hot day we had here. Love the vibrant color with that swirl of yogurt against it. I've not had many cold savory soups, but I do like chilled strawberry soup for dessert!
ReplyDeleteThanks for joining in this week @ See Ya In the Gumbo. I appreciate you coming by!
I was skipping soups for the summer but this sells me and I think, we will just learn more about cold soups. Thanks Judee.
ReplyDeleteSounds yummy! I have a ton of carrots (10lbs!) in my fridge right now and I need some recipes to use to use them up. This one is going to the top of my list, it's so hot today too it came at the perfect time!
ReplyDeleteI always think of soups as a wintertime food. When I asked for suggestions on my FB page for dinner, someone suggested chilled cantalope soup. I like the sound of that!
ReplyDeleteClever, clever. That sounds like a great way to use up carrots, as Eric said in her comment! Thanks for the tip and for linking it to Food on Fridays!
ReplyDeleteHot or cold I love this soup. Thanks for sharing it on foodie friday.
ReplyDeleteSo healthy! Yum! Thank you for sharing with us at Healthy 2Day Wednesday. :)
